Ramen

Mood: In need of warmth! Suitable for comfort eating, hangovers, quick pick-me-ups, when you’ve got a cold

INGREDIENTS:

  • Protein (pork, chicken, prawns, tofu, quorn)
  • Vegetable stock / chicken stock / pork stock
  • Medium noodles / wholewheat noodles
  • Soy Sauce
  • Oyster Sauce
  • Fish Sauce
  • Coriander
  • Thai seasoning / Korean seasoning
  • Spring Onions
  • Sesame Seeds
  • Miso Paste
  • Lemongrass Paste
  • Pak Choi
  • Sweetcorn
  • Beanspouts
  • Fat red chillis
  • Lime
  • Sriracha

METHOD:
1. Cook your meat – if using pork I add a marinade of soy paprika salt and pepper and thai seasoning. Pan fry to slightly crisp the fat then cook in the oven (200c). Flip halfway through.
If I’m using chicken, I usually buy a rotisserie chicken and shred it up
Prawns I pan fry to cook almost all the way – be sure to not cook them fully as they will cook in the stock
Tofu – no need to pre cook, but a marinade of soy sauce and seasoning is good – leave this in the fridge to really soak in any flavour

2. In a large pot add a tablespoon of lemongrass paste and a heaped teaspoon of miso paste 

3. Add 400ml of chicken stock and 400ml of vegetable stock (or just vegetable stock if this is a vegetarian alternative!)

4. Add sesame seeds, dry spring onion or shredded spring onions 
Bring to the boil

5. Pour a dash of oyster sauce and a dash of fish sauce (skip this if you’re making it veggie) 

6. Add a generous amount ( a few pinches) of the korean bbq seasoning

7. Add tablespoon of soy sauce. 

8. Add veg (and tofu here if you’re making it veggie) I like to use Pak Choi, shitake mushrooms, beansprouts, sweetcorn and spring onion

9. Add freshly chopped coriander

10. Add cooked meat

10. Add chopped red chilli

11. Add noodles
You can add some sriracha at this point and/or let people add their own at the table

12. A squeeze of Half a lime

Serve super hot in a deep bowl with chopstick and a spoon

EXTRA: We have a plate of extras on the table to add to add some crunch and flavour-Sriracha. Soy sauce. Spring onions. Beansprouts. Sweetcorn. Red chillis. Coriander. Sesame seeds

Enjoy! You’ll likely need a napkin and no shame when it comes to slurping the noodles and getting splashes of the broth all over you
